The use of native crops such as millets, pulses, chickpeas, and mung beans, which are naturally healthy, culturally acceptable, and label-free are part of the rooted in tradition. Engineered for the Future discusses how current processing technologies, precision fermentation, extrusion, digital supply chains, and artificial intelligence-enabled manufacturing can transform these crops into high-value protein ingredients and finished commodities for domestic and worldwide markets. The theme positions India to modernise tradition while also defining the future of plant-based nutrition around the world.
